I know I know…long-time-no-blog. A combination of busy lives, the backend of the website got locked down, I had a website job that took up most of the summer and fall, and and and.
The holiday season is upon us. I went to a Christmas cookie exchange and brought these fabulous treats along. Several people requested the recipe, so I’ve posted it here.
A note about the name:
Most people call these Chocolate Peanut Butter Balls, or if you are an Ohio State fan, you might call them Buckeyes. Brad’s family, (from whom I got this recipe) call them ‘Crickets’. If I remember the story correctly, Brad’s youngest sister, Kathleen, had to bring a treat to Girl Scouts, (or maybe it was a Halloween party), and she chose to rename these treats as ‘Crickets’. The name stuck, and to this day, we call them Crickets.
Crickets:
1 stick/4 ounces/8T softened butter
2 cups powdered sugar (icing sugar)
2 cups peanut butter – creamy or crunchy
3 cups Rice Crispies
Melted dark chocolate
Mix the first 3 ingredients, and then add the rice crispies. Mix until well combined. (It can help to spray a bit of cooking spray on your hands and “knead” the mixture together.)
Form into 1″ balls. I use a melon baller.
Refrigerate for an hour, or pop into the freezer for 10-15 minutes.
Dip in melted chocolate.
The finished product freezes well.
